RECIPE: Fiesta Chicken and Rice Bake

Okay so tonight's dinner was a SUCCESS! So I decided to share the recipe with everyone- what the original recipe is and how to clean it up to be a healthy recipe that the whole family will love!

Not only did it taste delicious, but my picky toddler actually ate it! SCORE!

So, here it is! 

Fiesta Chicken and Rice Bake

-1 can (10 3/4 oz) cream of chicken soup (or to clean it up, use the dry mix recipe!)
-1 cup salsa
-3/4 cup water
-1 cup frozen whole kernel corn
-3/4 cup uncooked rice (use brown rice for a healthier option)
-4 boneless skinless chicken breast halves
-paprika
-a pinch of shredded cheese

Directions:

1. spray a 2qt baking dish with non-stick cooking spray (olive oil or coconut oil is best) and pre-heat oven to 375

2. in the baking dish combine soup,salsa, corn, water and rice

3.place chicken over rice mixture and sprinkle with paprika. cover.

4. bake at 375 for 45 min or until chicken is no longer pink and rice is done.

5. sprinkle with cheese and enjoy!

serve with a side salad for a complete meal.
